Our noodles are made from the finest Canadian whole wheat flour and fresh, wholesome duck eggs. These are carefully combined into a luscious, rich dough. The dough is then pressed and turned continuously for at least 30 minutes to ensure the springiest elasticity. Once pressed, the dough is rolled and hand cut into delicate noodles before being allowed to rest at room temperature until the desired texture is achieved.
Our noodles are always handmade to ensure we know exactly what goes in them and that the quality is comparable to Hong Kong’s best noodle shops.
Our homemade soup is a true labour of love. A carefully simmered stock of fresh pork bones, dried halibut, shrimp, Chinese spices, and dried shrimp roe is dressed with a fine scattering of golden Chinese chives.
